The idea started as something personal. A love of dirty martinis, a curiosity about why they tasted better at a bar, and a lot of experimentation at home. That turned into conversations with bartenders across Los Angeles, countless rounds of testing, and a clear insight: brine deserved the same level of craft as everything else in the glass.
La Saum is a premium, cocktail-grade olive brine made specifically for the dirty martini. Crafted from single-origin Spanish olives and precisely balanced for flavor and salinity, it brings intention to the one ingredient that defines the drink.
La Saum was born from a simple realization: the dirty martini had evolved, but its most important ingredient had not.
For years, we were ordering perfectly balanced martinis at great bars, then going home and trying to recreate the experience. The spirits were right. The glassware was beautiful. The ritual was there. But something always fell short. It was the brine.
At the same time, culture was shifting. The martini was back. More people were investing in their home bar, hosting more, and caring about the details. But while spirits and barware had gone premium, brine had been left behind.
What existed on the market felt like an afterthought. Cloudy, inconsistent, pulled from an olive jar and never designed for cocktails. It lacked the clarity, balance, and elegance that define a proper dirty martini.
We set out to fix it.
We are not repurposing olive juice. We are creating a product with purpose. Clean, refined, and designed to elevate the entire experience. One bottle makes up to 25 martinis, turning a simple pour into something intentional and repeatable.
